Pineapple & Pesto Caprese Pizza

Oh, hi there!

Yes, I know what you may be thinking: either, 1) who the heck are you, again? or, 2) You're still around? Maybe you're even thinking a combination of the two! I realize that it's been a while since I've checked in and we talked about quinoa & cheese and thunderstorms; getting ready to move across the country tends to do that to you, and I'm sure the next couple of weeks will be even more busy than the last few....

Kale + Chickpea Quinoa & Cheese

Summer thunderstorms.

There is a strange sort of duality to summer thunderstorms. On one hand, the thunder is loud and terrifying, the lightning bright and dangerous. Dogs run and hide under tables or blankets or into their kennels. The sky goes from bright sunshine to almost nighttime-darkness in a matter of minutes, and the clouds hang so heavy and dark that it seems they might cave the roof in, might shatter the tops of the trees. Everything is quiet, waiting, balanced on the point of a knife, balanced on a single electron in the air....

Red, White & Blue Mason Jar Trifle

Hi all!

I'm back in Colorado, all settled in after my long drive from Spokane. For my trouble, Colorado greeted me with a blizzard and a foot-and-a-half of snow. I got to spend last Thursday morning shoveling the driveway, dressed in snow boots and a hat and gloves, while my dear home-state laughed at me and covered all my shoveling progress with nine more hours of snow. Puny human, your efforts are fruitless. But I enjoy watching you struggle. And by the way, watch out for that ice patch--yup, that one. Let me drop some snow chunks on you from the trees while you slide around, that'll help you tremendously. Gotta love summer in Colorado, right? (The answer to that is no. Snow lingering past May 22nd is, in my humble opinion, an abomination).

There's nothing like not one but TWO freak mid-to-late May snowstorms to get you in the mood for Memorial Day....

Spokane

As I said on Instagram and on Twitter, I have obviously been away from The Sagas and from social media for the past few weeks, and this is because they have been an insane whirlwind of movement and emotion and change and stress and joy and tears of all kinds. I had my last week of classes, in which my senior writing project was due (61 page manuscript + 11 page aesthetic statement was the final total!). Then it was finals week with its multitude of exams, and then my family came out to Spokane to attend my college graduation. After that, I had to get my whole life packed up and into the car, and we drove the two full days from Spokane back to Colorado.

In spite of all the busyness....

Pepper Jack Chicken Parmigiana

I'm baaack!

So you may or may not have noticed that last week I took an unexpected hiatus from blog-posting. I could say that I was doing something impressive, like fighting bears with my "bear" hands (hah, catch that crappy pun? You're welcome), or meeting with heads of state or global ambassadors, or something else equally impressive.

The reality is far less awe-inspiring. It involves the fact that....

Easter Chocolate Chow Mein Nests

Hey, guess what! It's Easter!

Well, almost. This Sunday is Easter, which is super exciting. Easter is another one of those holidays where chocolate somehow became a huge part of the day's celebrations....chocolate Easter bunnies, chocolate Cadbury eggs and mini eggs, chocolate eggs stuffed with marshmallow fluff, etc. Have you ever noticed how many holidays have chocolate involved in them somehow? Kinda think it tells you something about how....

Strawberry Honey Chamomile Smoothie

No power outages or freak fog this week, so nothing got in the way of shooting the blog post this time! Plus, the sun even came out for two days in a row. I think Spokane may have been apologizing. Spokane: throw in some blooming cherry blossom trees and I will forgive you. Deal?

I'm having a minor life freak out because I just realized that....

The Homeland: Colorado

I was really excited to get up yesterday and make, shoot, and share this new recipe I brainstormed up last week. I set my alarm for 8:00am, got my camera and everything ready, prepped the stuff I needed to put in the freezer overnight, and settled in to sleep.

Well, life had other plans for me. I woke up to an absence of sound; my fan had turned off and wouldn't turn back on. Since it's four years old, I didn't think much of it, I just figured it had worn out. But then my lamp didn't turn on. Neither did....

Mint Chocolate Chip & Macadamia Nut Cookies

Happy St. Patrick's Day, friends!!!

I love St. Patrick's Day! I'm not really sure why--it's not like my family or friends ever did anything out of the ordinary to celebrate the day. I'm not Irish, and neither are any of my ancestors (that I know of, at least). Green isn't my favorite color, and I don't particularly like corned beef and cabbage. All I ever really did was wear green to avoid being pinched, and make leprechaun traps in elementary school....

Bruise Berry Pie

I have something very exciting to share with you all: IT'S PI DAY!!! 3.14, 03/14, March 13th, the day of the mathematical number (and Greek letter) of pi: π.

My excitement for this day is not rooted in a profound love for the numerical, nor a secret desire to drop-kick writing and become a professional mathematician. Truth is, I care little for anything more than simple math. Math was never a friend to me growing up, and we've remained respectfully distant in recent times....

Creamy Strawberry Pineapple Peanut Butter Smoothie

We're slowly inching our way towards strawberry season, and personally, I can't wait! I love strawberries. They remind me of late spring and early summer and warmth and sunshine. They also remind me of things like angel food cake and whipped cream and waffles--all good things, in my opinion.

The best strawberries I have ever had are from a little farm outside of Savanna, Illinois....

Three "P" Pesto Pasta

BREAKING: The sun just peeked through the clouds, causing me to ask of Spokane, "Spring, are you coming?"

Nope, I just checked the weather and apparently the weekly forecast is: partly sunny, snow, snow, rain, rain, cloudy, snow--which is not springy at all. Which is a real shame-bummer, since I've been feeling super springy lately. This is on account of a few things....

Almond & Pine Nut Basil Pesto

This week has been the pits.

I'm not really sure where that phrase came from or what it means. What pits are they referring to? Armpits, 'pits? Giant chasms of dirt, pits? The family of Brad and Angelina Jolie, Pitts?

Either way, this week has been the 'pits pits Pitts. That gnarly cold I had barely caught last Friday? It blew up. I still have it, and it got much worse. I feel like a pug....

Cheesy Hot Italian Sausage Baked Pasta

Happy Friday, all!

Unfortunately, I did not completely avoid the end-of-winter colds that are sweeping around campus right now. Much to my dismay, I woke up yesterday feeling a little scratchy in the throat. So far that's all it's been, so I'm crossing my fingers that it'll blow over quickly and....

Naked Chocolate Cake with Strawberry Buttercream and Coconut Flakes

Peeps. It's Valentine's Day!

Okay, I know people have differing opinions on Valentine's Day. In general, we tend to either really love it or really hate it, with little to no middle ground.

I think it's semi-ridiculous NOT to love Valentine's Day. What's not to love? It's seriously a holiday celebrating two of the greatest things in the world: love, and chocolate. Unfortunately, people get all mentally constipated over....
